One thing you will quickly notice, most of my recipes are simple, quick and easy to prepare. My backyard birds fit the bill for a quick and easy meal. A well seasoned entree doesn’t have to be overly complicated or contain a gazillion ingredients. Well, o’k without my seasoning and rub blends I guess the ingredient list could get quite a bit longer. But having my favorite go to blends on hand makes my kitchen time short and sweet without sacrificing flavor.
4-8 Chicken breast tenders (boneless, skinless)
2-4 Tbsp Backyard Rub seasoning
1-2 Tbsp Coconut Oil
Heat coconut oil in skillet, add chicken breast tenderloins and sprinkle with Backyard Rub seasoning. Pan sear over med-high heat, reduce heat, cover and continue cooking until no longer pink in middle.
You can also throw the chicken tenders on the grill (minus the coconut oil) for a quick easy meal without heating up the kitchen. My grandchildren love them on skewers because obviously everything is more fun on a stick.
For a light summery dinner I like to add a side of Roasted Asparagus or Roasted Vegetables and Baked Sweet Potato Wedges. If you are looking for a hearty, filling dish you can add some quartered new potatoes and sliced red onion to the skillet with the Chicken tenders. You may need to add a little more oil and seasoning to the skillet.
I don’t typically give a solid measurement for the amount of seasoning mix to use because we all have different tastes. Some like a hint and some like it bold. So, sprinkle on a bit and try it out. Just remember, you can always add more but you can’t take any away once it’s there! You may decide to add a little more or a little less the next time.
